Introduction to Lipase Enzyme

Lipase Enzyme is a white to light-yellow powder produced by submerged fermentation of selected microbial strains followed by spray drying. The enzyme hydrolyses the ester bonds of triglycerides stepwise, releasing free fatty acids, partial glycerides, and glycerol; in low-water media the same catalytic site runs esterification and transesterification, allowing one product to cover both hydrolytic and synthetic processes.

Commercial grades are standardised on a maltodextrin carrier for accurate dosing and stable dispersion. Food-grade batches support dairy flavour development, cheese ripening, and bakery crumb conditioning; feed-grade batches raise fat digestibility in young-animal diets; technical-grade batches serve detergent, leather, and biodiesel operations. The spray-dried powder disperses rapidly in process water and blends cleanly with common formulation auxiliaries.
